Always trust your gut, they say: your gut knows what your head hasn’t figured out yet.

The other day my gut was telling me that I was hungry. My head concurred so I headed down to Rocky Mountain Gut Truck.

Gut truck owners John Casey and Deanna Levavasour launched their venture a few months ago and named it ‘Gut Truck’ because it was, “something quirky to go with our quirky menu,” said Levavasour.

The pair is challenging local taste buds with an experimental menu that’s unafraid of combining beef and tropical fruit. Never mind that they’re running the community’s only food truck, they’ve also got the only place in town where you can get a donair.

Their donair is a beefy, savoury wrap on a thin, Lebanese-style pita with tomatoes and raw onions topped with a sauce made from evaporated milk, vinegar, garlic powder and sugar.

Their Kiwi Burger features pineapple, beets and a fried egg.

Their Scottish Burger has beer battered haggis.

For desert, they have something called a cheesecake burrito.

I ordered the Stuffed Jalapeno and Cream Cheese Burger, which I was allowed to eat in the safety and warmth of the Greenhill.

Last week they were experimenting with their Canadian Breakfast Burger: built with waffles, sausage patty, cheddar cheese, bacon, a fried egg, a hash brown and Canadian maple syrup.

“We wanted to be more creative with our food and give the Crowsnest Pass something different,” said Levavasour. “And something delicious as well.”

The Gut Truck can usually be found next to The Greenhill Hotel in Blairmore. Its owners sometimes park their business in Pincher Creek, Waterton and as far away as B.C.
