Onemore opens doors in Crowsnest Pass

New restaurant brings fresh, casual dining

The Crowsnest Pass dining scene has a new addition with the grand opening of Onemore on April 30 from 5 to 9 p.m., a contemporary casual restaurant designed to offer a welcoming, elevated experience for locals and visitors alike in downtown Coleman.

Head chef and general manager Adam Tundak said the goal is to provide a space that feels comfortable for any occasion, from a date night to a quick glass of wine before an evening out.

“Onemore will provide a contemporary casual dining experience for the community and travellers alike,” said Tundak, “We aim to bring a diverse background of world cuisines and elevate them, while still being fun and not too stuffy. It’s a place where you can go for an intimate date, celebrate with a big group or just pop in for a unique glass of wine and a quick snack before your next stop for the night.”

The new concept brings Tundak’s personal touch to the familiar space.

“The rebrand was to bring in my own personal flair and vision to the space,” he said, “We wanted to ensure that while the space remained familiar, the food and experience would be unique and fresh. The name also brings a sense of openness and welcoming, as we can always have one more bite, or have one more friend at the table.”

Since moving to the community in January, Tundak said the support has been tremendous.

“The transition has been very smooth. Everyone I’ve met has been incredibly welcoming, and once word was out that Onemore was opening, the positive response has been almost overwhelming,” he said.

The restaurant is also planning some unique additions to its offerings in the coming months.

“We will be offering some wonderful deals on wines as we bring in a new selection of natural bottles to choose from,” said Tundak, “I am also looking to host some Sunday events in the future as an avid fan of Formula 1.”

Taking the lead on his own business is a milestone for Tundak, who has spent years working in other kitchens. After graduating from NAIT in Edmonton in 2015, Tundak trained at top restaurants, including the Michelin-starred NoMad Hotel in New York, where he was promoted to head sous chef. He also worked in Paris, led the kitchen at Local Public Eatery in Medicine Hat, and refined his skills at Café Linnea and Bar Clementine in Edmonton under chefs Kelsey Johnson and Filliep Lament, alongside his close friend, chef Joseph Wiwchar.

With Onemore, Tundak said he is excited to build connections with the community and to lead his own culinary project for the first time.

“To be taking charge of a business in the Pass is such an exciting feeling,” he said, “Writing my own story while being able to serve my community is everything to me, after spending my career working for others and executing their vision, an opportunity to do my own thing is something I won’t be taking for granted.”

Tundak said he hopes residents will feel free to stop by and learn more about the restaurant and the vision behind it.

“I don’t think there is much else to say other than I’m an open and welcoming person, so if anyone from the community wants to know more, they are free to come and ask,” he said.
